Parsley has been cultivated as a culinary and medicinal herb for centuries. It is most often used as a garnish but it is a very important, highly nutritious vegetable that deserves to be appreciated for its distinct flavor. It is most often used in middle eastern dishes such as tabbouleh or in a French dish known as Persillade where parsley and garlic are combined sometimes with olive oil and used as a sauce in vegetable and fish dishes.
