These slender roots average 9 inches long and 2 inches at the shoulder. The roots are creamy white color with a distinctive oyster-like flavor. This is an excellent, hardy variety; perhaps one of the most popular today.

WHEN TO PLANT: plant late fall or winter in mild winter areas. Plant as soon as soil can be worked in spring in cold winter areas. Salsify requires a long growing season of at least 100 days.
